Oliver likes to challenge pre-conceived ideas and ruffle a few feathers and all power to his elbow for that.
This is brilliant work, all the typical fresh, tangy flavours are in evidence but the oak fermentation adds layers of richness and interest making a quite sublime glass of wine.
