Cool Coast refers to the fact that this Paredones vineyard is only around 10 kilometres from the Pacific Ocean, and every day during the summer and autumn the ocean mists roll up the coast and act as a “sunscreen” for the ripening grapes.
This protects them from the harsh midday heat, thus allowing the grapes longer “hang time” and enabling a longer, slower maturing process on the vine.
Grapes like Sauvignon Blanc really like this and it allows them to produce a more elegant, refined, some would say “European” style.
These Cool Coast wines are a real favourite chez Stainton, particularly as things like Sancerre continue to increase in price.
